Ingredients
6 medium ripe tomatoes, diced
1 medium fresh mozzarella cheese, cubed
4 spring onions, finely chopped
a few leaves of fresh basil, roughly chopped
1 tablespoon extra virgin olive oil
4 Vegie patty
Wholemeal rolls to serve
Method
- Mix tomatoes, mozzarella, spring onion, basil and olive oil together. Stand for 10 minutes then drain and discard excess liquid.
- Vegie patty on BBQ plate over high heat for 3–4 minutes turning once.
- Top each burger with two tablespoons of tomato and basil salsa and serve with warm rolls.
