Ingredients
6 medium ripe tomatoes, diced
1 medium fresh mozzarella cheese, cubed
4 spring onions, finely chopped
a few leaves of fresh basil, roughly chopped
1 tablespoon extra virgin olive oil
4 Vegie patty
Wholemeal rolls to serve

Method
  1. Mix tomatoes, mozzarella, spring onion, basil and olive oil together. Stand for 10 minutes then drain and discard excess liquid.
  2. Vegie patty on BBQ plate over high heat for 3–4 minutes turning once.
  3. Top each burger with two tablespoons of tomato and basil salsa and serve with warm rolls.
