Ingredients
3 bunches asparagus

DRESSING
1 tomato, finely chopped with seeds removed
2 tbsp olive oil
1 tbsp white wine vinegar
1 clove of garlic, crushed
1 tsp dijon mustard
1 tsp honey 2-3 drops Tabasco sauce
salt and pepper
Method
  1. Whisk together all dressing ingredients and add Tabasco sauce, salt and pepper to taste. Stir through the tomato
  2. Bring salted water to the boil
  3. Remove woody ends of asparagus and cook until tender
  4. Rinse under cold water
  5. Arrange asparagus on a platter and pour over the dressing
  6. Season with extra pepper
