Ingredients
3 bunches asparagus
DRESSING
1 tomato, finely chopped with seeds removed
2 tbsp olive oil
1 tbsp white wine vinegar
1 clove of garlic, crushed
1 tsp dijon mustard
1 tsp honey 2-3 drops Tabasco sauce
salt and pepper
Method
- Whisk together all dressing ingredients and add Tabasco sauce, salt and pepper to taste. Stir through the tomato
- Bring salted water to the boil
- Remove woody ends of asparagus and cook until tender
- Rinse under cold water
- Arrange asparagus on a platter and pour over the dressing
- Season with extra pepper
