Ingredients:
4 Enchiladas (spinach and herb wraps pack)
8 Meatballs, cooked and broken into small bits
4 large Tomatoes, thinly sliced
1/4 cup Coriander, chopped
2 Carrots, grated
1 cup Cheese, grated (optional)
8-10 tsp Greek Yoghurt
Olive Oil Cooking Spray


How to make it:
  1. To assemble the enchiladas, spread the ingredients evenly on half of the wrap.
  2. Then fold the other half of the wrap over, pressing down lightly so it holds tightly.
  3. Spray a hot pan with cooking spray, carefully place the wrap in the pan and cook for about 2 minutes on either side or until golden brown.
