Ingredients:
4 Enchiladas (spinach and herb wraps pack)
8 Meatballs, cooked and broken into small bits
4 large Tomatoes, thinly sliced
1/4 cup Coriander, chopped
2 Carrots, grated
1 cup Cheese, grated (optional)
8-10 tsp Greek Yoghurt
Olive Oil Cooking Spray
How to make it:
- To assemble the enchiladas, spread the ingredients evenly on half of the wrap.
- Then fold the other half of the wrap over, pressing down lightly so it holds tightly.
- Spray a hot pan with cooking spray, carefully place the wrap in the pan and cook for about 2 minutes on either side or until golden brown.
