Ingredients:
1 tbsp (20g) Butter
1/2 medium Brown Onion, finely diced
200 g Button Mushrooms, roughly diced
1 tsp Finely Chopped Garlic
500 g  Beef Mince
1/2 tsp Dried Oregano
1/2 tsp Ground Cumin
1 tsp Smoked Paprika
10 Regular Sized Tortillas
250 g Extra Tasty Cheddar, grated
2 Avocados, stone removed
juice of 1 Lime
1 tbsp Finely Chopped Coriander
1/2-1 tsp Salt, or to taste
1 tsp Mexican Chilli Powder (optional)

How to make it:
  1. Place a large frying pan over medium heat, add butter, once melted add onion and mushroom, cook for 5 minutes, add garlic and cook for a further 2 minutes.
  2. Add beef mince, oregano, cumin and paprika. Break up mince with a spatula and stir well to combine with other ingredients, cooking for about 5 minutes until mince is cooked through. Remove from heat and set aside.
  3. Place a tortilla on griddle or frying pan, place some cheese on half of the tortilla, top with a few tablespoons of mince mixture then sprinkle with a little more cheese. Turn heat onto medium-low, allow cheese to melt slowly and for the tortilla to crisp up, this should take around 3 – 5 minutes. Fold over tortilla.
  4. Meanwhile for smashed avocado, place avocado, lime juice, coriander, salt and chilli powder in a mixing bowl and mash roughly with a fork.
  5. Once tortilla is cooked, remove from heat and slice into wedges, serve with a dollop of smashed avocado.
