Ingredients:
250 g Sausage Mince
1/4 cup Fresh Breadcrumbs
250 g Beef Mince
1 Small Onion, finely chopped
1 Small Carrot, coarsely grated
1 Small Zucchini, coarsely grated
1 tbsp Tomato Paste
1 tbsp Barbecue Sauce
1 Egg, lightly beaten
3 sheets Frozen Puff Pastry, thawed
1 Extra Egg, beaten
Tomato Sauce, to serve
How to make it:
- Preheat oven to hot, 200°C. Grease and line 2 baking trays.
- In a large bowl, combine sausage mince, mince, onion, carrot, zucchini, breadcrumbs, tomato paste, sauce and egg. Season to taste.
- Cut each sheet of pastry in half. Shape mixture into 6 long sausages. Race each sausage along one edge of each pastry sheet and roll tightly to seal.
- Cut each roll into 3 pieces. Brush with egg, place on greased oven trays, about 3cm apart. Score tops of pastry.
- Bake for 20-25 minutes until golden and cooked through. Serve with tomato sauce.
- Freeze uncooked sausage rolls in an airtight container for up to 2 months
