Ingredients
2 medium raw beetroot, peeled
1 red onion, sliced
400g chickpeas
1 large orange, peeled and sliced
80g pinenuts, toasted
1 clove of garlic, crushed
DRESSING
1 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp soy sauce
1 tsp mixed dry herbs
Method
Step 1
Mix all the ingredients for the dressing together in a jar and shake
Step 2
In a food processor grate the beetroot coarsely
Step 3
Mix all salad ingredients together and pour over dressing. Toss
