1 pink grapefruit
2 tbspn olive oil
salt and pepper
2 avocados, sliced
¼ iceberg or cos lettuce, torn into pieces
½ bunch coriander
Method
Step 1
Peel the grapefruit of skin and pith. with a sharp knife cut out each segment, holding the grapefruit over a bowl to catch all the juices, then squeeze the remaining membrane of juice.
Step 2
Whisk together the juice, olive oil, salt and pepper. Taste and adjust the seasonings. Gently mix the avocado and grapefruit segments together in the dressing.
Step 3
Tip the lettuce into a bowl and spoon over the avocado and grapefruit. Season with additional pepper if required.
