Method
- Preheat oven at 200°C. Line baking tray with non-stick baking paper.
- Crush or finely slice garlic cloves. Cut potatoes into wedges and toss with the garlic, olive oil, lemon juice and dried oregano in a bowl.
- Arrange wedges on baking tray in a single layer and place in oven.
- Roast in oven for 35 minutes (or until crunchy), turning every 10 minutes.
- Added value: try serving the potato wedges with fresh tzatziki. This is made by combining Greek-style plain yoghurt with finely chopped cucumber, crushed garlic and salt and pepper.
