Ingredients
200g green beans, sliced
2 corn cobs, kernels removed
200g bean sprouts
½ red capsicum, diced
2 green onions, sliced
1 green chilli, de-seeded and sliced
5 kaffir lime leaves finely sliced
coriander leaves
1 tbsp sesame seeds, toasted

DRESSING
1 tbsp oil
1 tsp sesame seed oil
1-2 lime, juice and zest (to make 1/3 cup)
2 tbsp fish sauce

Method
  1. Place the dressing ingredients in a jar and shake
  2. Bring a saucepan of salted water to boil. Add the beans, cook for 2 minutes, add the corn and cook until tender and still crunchy. Drain and run under cold water
  3. Place in a salad bowl and add the sprouts, capsicum, onions, chilli and kaffir lime leaves. Pour over dressing, toss and garnish with coriander leaves and sesame seeds
