Ingredients
3 boiled eggs
2 rashers of bacon, sliced
olive oil spray
1 cos lettuce
6 anchovies
½ cup croûtons
Parmesan, freshly grated
Caesar dressing
Method
1. Peel eggs and cut into quarters
2. Spray a fry pan and cook bacon until crisp, then drain on paper
3. Pull out the centre of the cos lettuce and inner leaves. Tear leaves, wash and dry thoroughly
4. Arrange leaves on a platter and pour over dressing until well coated
5. Scatter the eggs, bacon, anchovies and croûtons. Garnish with Parmesan cheese
