sticky Sweet Potato Salad

Ingredients
750g sweet potato, peeled and sliced
30g butter
90g brown sugar
1 orange, half juiced and the zest

Method

1. Boil the sweet potato until just cooked but still firm
2. Melt butter and add the brown sugar, orange juice and zest, and coat the pieces of sweet potato
3. Continue cooking until the mixture becomes sticky (approximately 7 minutes)
