Ingredients
2 large potatoes, peeled and diced
400g chickpeas
½ red onion, sliced
1 tomato, sliced into eighths
½ cup green olives
Parsley, chopped
Mint, chopped
Oregano, chopped
salt and pepper
DRESSING
2 tbsp olive oil
1 tbsp white wine vinegar
2 tsp wholegrain mustard
1 tsp honey
salt and pepper
Method
- Place all dressing ingredients into a jar, shake and add salt and pepper
- In salted boiling water, cook the potatoes for 10 minutes until firm and tender
- Place all salad ingredients into a bowl, spoon on the potatoes and pour over the dressing, mixing gently.
- Taste and season with salt and pepper. Garnish with freshly chopped herbs
