Ingredients
850g baby beets (canned)
6 sprigs thyme
salt and pepper
1 lemon
aluminium foil
Method
- Pre heat oven 180C – 200C
- Drain can of baby beets and place in aluminium foil (large enough to make a parcel)
- Sprinkle over the thyme, salt and pepper and seal parcel
- Place on a baking tray in the oven for 30-45 minutes
- Open parcel and tip into a serving bowl
- Grate over some zest of the lemon and a squeeze of juice to taste
