Ingredients
350g beans
1 bunch broccolini
1 tbsp olive oil
½ cup dry roasted hazelnuts, chopped
1/3 cup dried cranberries(craisins), finely chopped
2 cloves of garlic, sliced
1 tbsp red wine vinegar
Italian parsley
salt and pepper
Method
- Bring salted boiling water to the boil and cook the beans and broccolini until tender. Drain and run under water. Place onto a serving dish
- Heat a fry pan and add the oil, hazelnuts, cranberries and garlic. Cook for 1-2 minutes
- Add the vinegar and parsley
- Spoon the warm dressing over the broccolini and beans and season with salt and pepper
