Ingredients
4-6 ripe tomatoes, sliced in half vertically
sea salt and pepper
2 cloves of garlic, sliced
fresh bread crumbs
2 sprigs of Italian parsley, leaves finely chopped
2 tbsp olive oil

Method
  1. Preheat oven to 180C-200C. Lay the tomatoes cut side up on an oven tray. Season with the salt and pepper and sprinkle on the garlic
  2. Mix together the bread crumbs and parsley and sprinkle over the cut face of the tomatoes. Drizzle with oil and bake until the tomato is tender
  3. When serving, pour over any remaining juices
