4-6 ripe tomatoes, sliced in half vertically
sea salt and pepper
2 cloves of garlic, sliced
fresh bread crumbs
2 sprigs of Italian parsley, leaves finely chopped
2 tbsp olive oil
Method
- Preheat oven to 180C-200C. Lay the tomatoes cut side up on an oven tray. Season with the salt and pepper and sprinkle on the garlic
- Mix together the bread crumbs and parsley and sprinkle over the cut face of the tomatoes. Drizzle with oil and bake until the tomato is tender
- When serving, pour over any remaining juices
