1 red, green, yellow capsicum
olive oil spray
3 zucchini
8 flat mushrooms
4 Roma tomatoes
salt and pepper
1 spanish onion
400g cannellini beans or chick peas, drained and washed

Parmesan cheese, shaved

Method
Step 1 Pre heat the grill to high
Step 2 Cut the capsicum & onion into wedges, spray with oil and place under the grill, skin side up. Cook until blackened and put into a paper bag to cool, then peel
Step 3 Cut the zucchini in half, clean the mushrooms, halve the tomatoes lengthwise and place all vegetables on the grill tray, spray with oil and season with salt and pepper
Step 4 Cook under the grill until tender
Step 5 Mix the vegetables and cannellini beans with the Italian dressing
Step 6 Garnish with shaved Parmesan
