Ingredients
Chicken cut into cubes
Red curry paste
Coconut milk
Bamboo shoots
Carrots
Bell peppers
Mushrooms
Lime leaves ( stalk removed)
Fish sauce
Sugar

Preparation
Put vegetable oil in saucepan add curry paste and stir
Add 1/2 can coconut milk (Chaokoh) and keep stirring
Put chicken cubes in curry mixture and mix
Add lime leaves, mushrooms, peppers and bamboo shoots (or any vegetables desired like broccoli, carrots etc.)
Add the rest of the coconut milk and the sugar
Let it boil for 5 -10 minutes
Add more curry paste and fish sauce according to taste
Serve with steamed Jasmine rice
