Ingredients


1 tbs olive oil
1.5kg chicken thigh pieces
1 onion, chopped
1 red capsicum, deseeded and chopped
45g can anchovy fillets in oil, drained (optional)
½ cup white wine
½ cup chicken stock
405g can Woolworths Select Diced Italian Tomatoes with Basil and Garlic
½ cup black olives
2 tbs chopped parsley


Method

1. Heat oil in a pan and cook chicken pieces until well browned on all sides. Remove from pan and set aside.

2. Add onion, capsicum and anchovies to pan and stir over heat for 3 minutes until onion has softened. Stir in wine and boil rapidly until reduced by half. Add stock and tomatoes and bring to the boil.

3. Add olives to pan and return pieces. Reduce heat, cover and simmer for about 45 minutes. Sprinkle with parsley and serve
